Infusion and taste of the tea:
An earthy taste is typical of Pu Erh, sometimes slightly sweet. The older the tea, the milder it tastes, but the longer it is steeped, the coarser and earthier it becomes. The infusion has a very dark, almost opaque colour. The aroma is fresh and astringent. Pu Erh is excellent for preparing iced tea.

Origin of the tea: ORGANIC Sencha
This ancestor of all teas has an extraordinarily interesting history and production process. It is also surprising that, unlike other teas, Pu Erh does not lose quality with age. Quite the opposite – the older it is, the more delicate its taste. The name is probably derived from the town to which the pickers carried the tea for processing. The district of Pu'er lies in the south-western Chinese province of Yunnan. It is known for its relatively high altitude and a specific climate influenced by monsoon rains. Perhaps just as important, or even more important than the growing area, is the method. Pu Erh can come from various forms of the Chinese tea plant (Camellia sinensis). The lowest-grade tea is considered to be that made from tea bushes grown from seeds or cuttings and growing at relatively low altitudes. The bud with 3-4 leaves is picked, as the older leaves are essential for the properties of Pu Erh. Processing is mostly still done by hand and is based on so-called slow fermentation. If the weather permits, the leaves are spread out in the sun or in a ventilated room, where they wilt. If it rains, the farmers use heating to dry them. The next step is the “kill green” – the leaves are heated on a dry pan and rolled. This stops the activity of the enzymes. The leaves are then mixed, twisted and dried in mild sunlight. Such tea is called Mao Cha. It is either sold on the market or processed further. It is moistened, piled into heaps and left to ferment. Thanks to the natural action of Aspergillus and Penicillium strains and a range of yeasts, the tea matures to excellent quality. The maturing time depends on the desired result and the tea garden; in some places it is a matter of days, elsewhere months or a year. When it is finished, the leaves are sorted, steamed and pressed. The result is bricks, cakes, nests or tablets. The tea is referred to as Shu Pu Erh. Pu Erh can be found on the market under the names Pchu er, Pu'er, Pu-Erh.

Pour boiling water over the Pu-Erh herbal blend, in a ratio of 1 teaspoon per 1.5-2 dl. To prepare tea in a teapot, add 1 extra teaspoon. Steeping time 3-5 minutes (covered cup), then strain.
